Goat Milk Cheese - Aged to Perfection!
PEPPERCORN

Origin - Hickory Nut Farm, 21 York Lane, Lee NH  03681 USA
Type - firm unpasteurized goat milk pressed curd with crushed and
whole peppercorns, aged in brine in our cheese cave for at least two
months
Form - 8" diameter wheel, 5 to 7" high and weighing 7-9 lbs
Characteristics - rindless, very firm, light yellow interior sprinkled with
brown, red and pink peppercorns, creamy spicy sweet and peppery
Accompaniments - Wine- spicy red, Beer:- full bodied
Suggested Uses - sprinkled on salads, simple cracker, or eat as slivers
LACEY WHITE

Origin – Hickory Nut Farm, 21 York Lane, Lee, NH 03861 USA
Type – hard cheese from unpasteurized goat milk; aged in wax,
pressed curd.
Form –  8” diameter wheels, 4 to 6” deep, 7 to 8 pounds.
Characteristics – rindless, bone white interior laced with openings,
smooth aged for two months to crumbly texture, usually of a butter
cheddar nature.
Accompaniments –figs, dried fruits (apricots) and nuts, Mango
chutneys, Wine – a chilled Chablis,  Beer – lagers.
Suggested Uses – thin slices on tomatoes on toast garnished with
basil and drops of balsamic vinegar. Shavings on Granny Smith Apples
or cold hard pears.  Grated on pot roast, macaroni and cheese,
omelets with Vidallia onions. Layered with butterflyed chicken or with
breaded haddock.  Shavings on steamed leafy vegetables with drops
of balsamic vinegar.
TERRENE

Origin – Hickory Nut Farm, 21 York Lane, Lee, NH 03681 USA
Type – hard cheese from unpasteurized goat milk, natural rind (looks
like tree bark), pressed curd.
Form – 8” wheel, 5 to 7” deep, 7 – 8 pounds.
Characteristics – rind is edible mottled with gray color variations and
can be deeply creviced, interior is white to beige in color, creamy,
earthy, mushroomy-tangy-complex flavor
Accompaniments – nuts, dried fruits, simple crackers, truffle honey
drizzles, thin toasted French bread, Wine –  robust red, Beer – dark
full-bodied, Chai flavored teas
Suggested Uses – Sprinkled over Macaroni and cheese
Grated over steamed vegetables, beans, beets, asparagus, etc.
Stuff celery sticks, grape tomatoes, raspberries, poached pears
Use in Western sandwiches, hamburgers, omelets

CARAWAY SELECT

seeds, waxed rind, aged in our cheese cave at least 2 months
Form – 8” diameter wheel, 5 to 7 “ high, 7 to 9 lbs.
Characteristics – rindless, light yellow interior, creamy spicey, strong
caraway flavor, snappy, with a hint of mint
Accompaniments – plain as is, toast points, Wine – spicey red, Beer
– full bodied
Suggested Uses – sprinkled on simple salads. Mixed into sauerkraut,
or pickled beets. Mixed into pesto – as a dip
    Bottom Line – This cheddary cheese excites the palate with degrees of tastes - sweet,
    nutty, simple - ending with a wonderful refreshing tangy bite. Serve as very thin slivers – as
    they are power packed with flavor.
